In many tropical countries, particularly in sub-Saharan Africa, cassava is one of the most important staple foods. People eat the starchy storage roots but also the leaves as a vegetable. Both have to be cooked first to remove the toxic cyanide compounds that cassava produces.

But the roots have a disadvantage: although rich in calories, in general they contain only few vitamins. Vitamin B6 in particular is present in only small amounts, and a person for whom cassava is a staple food would have to eat about 1.3 kg of it every day for a sufficient amount of this vital vitamin.

Vitamin B6 deficiency is prevalent in several African regions where cassava is often the only staple food people’s diet. Diseases of the cardiovascular and nervous systems as well as are associated with vitamin B6 deficiency.

Plant scientists at ETH Zurich and the University of Geneva have therefore set out to find a way to increase vitamin B6 production in the roots and leaves of the cassava plant. This could prevent vitamin B6 deficiency among people who consume mostly cassava.

Their project has succeeded: in the latest issue of Nature Biotechnology, the scientists present a new genetically modified cassava variety that produces several-fold higher levels of this important vitamin.

“Using the improved variety, only 500 g of boiled roots or 50 g of leaves per day is sufficient to meet the daily vitamin B6 requirement,” says Wilhelm Gruissem, professor of plant biotechnology at ETH Zurich.

The basis for the new genetically modified cassava variant was developed by Professor Teresa Fitzpatrick at the University of Geneva. She discovered the biosynthesis of vitamin B6 in the model plant thale cress (Arabidopsis thaliana). Two enzymes, PDX1 and PDX2, are involved in the synthesis of the vitamin. With the introduction of the corresponding genes for the enzymes, into the cassava genome, the researchers produced several new cassava lines that had increased levels of vitamin B6.

To determine if the increased production of the vitamin in the genetically modified cassava was stable without affected the yield, the plant scientists conducted tests in the greenhouse and in field trials over the course of several years. “It was important to determine that the genetically modified cassava consistently produced high vitamin B6 levels under different conditions,” says Gruissem.
Measurements of the metabolites confirmed that cassava lines produced several times more vitamin B6 in both roots and leaves than normal cassava. The researchers also attributed the increased production to the activity of the transferred genes, regardless of whether the plants were grown in a greenhouse or the field. The increased vitamin B6 trait remained stable even after the cassava was multiplied twice by vegetative propagation.

Previously, the researchers had analysed several hundred different cassava varieties from Africa for its natural vitamin B6 content — none had a level as high as the genetically modified variety.

Vitamin B6 from the genetically modified varieties is bioavailable, which means that humans can absorb it well and use it, as was confirmed by a research team at the University of Utrecht.

“Our strategy shows that increasing vitamin B6 levels in an important food crop using Arabidopsis genes is stable, even under field conditions. Making sure that the technology is readily available to laboratories in developing countries is equally important,” says Hervé Vanderschuren, who led the cassava research programme at ETH Zurich and recently became a professor of plant genetics at the University of Liège.

It is still unclear when and how vitamin B6-enhanced cassava will find its way to farmers and consumers. The new trait should be crossed in varieties preferred by farmers using traditional plant breeding or introduced into selected varieties using genetic engineering.

From a strong Americano to a frothy cappuccino, four billion cups of coffee are knocked back every day across the globe.
And behind the scenes, thousands of people work at coffee plants, roasting green coffee beans until they change into the rich-flavoured brown ones that are ground down to make a tasty drink.
But coffee workers may be in danger of irreversible lung diseases, according to an investigation by the Milwaukee Journal Sentinel.

Roasting coffee releases a chemical called diacetyl, an organic chemical used in food flavourings, most famously in the butter-flavouring added to popcorn.
It is considered safe to eat, but studies show it can be toxic if heated and inhaled over a long period.
In the 1990s, popcorn plant workers exposed to these levels of fumes suffered serious, incurable lung diseases, after just a few months, according to a report by the United States (US) Centers for Disease Control and Prevention (CDC).

Specifically, they suffered obliterative bronchiolitis – a rare, irreversible form of lung disease now known as ‘popcorn workers’ lung’.
The Milwaukee Journal Sentinel wanted to find out if people working in coffee roasting factories could be facing similar dangers.
Reporters there tested the air at two mid-sized roasteries in Wisconsin for diacetyl levels in the air.
They found levels were up to four times higher than the limits set by the CDC, putting workers in danger.

However the results expose problems only when coffee is roasted on an industrial scale – and are not relevant to baristas grinding the black stuff in café or to caffeine-lovers pushing down cafeterias at home.

“Diacetyl particles are small enough that they bypass hairs and mucous in the nose and throat and get into those very smallest airway passages,” Alan Barker, a pulmonary specialist at Oregon Health and Science University told Wired.

There has been a suggestive study done of coffee roasting workers, compared to people who had desk jobs in coffee plants,” he added.
“And they showed that the roasters had more things like cough and shortness of breath than those who were not closely exposed.”
Diacetyl is also released while makin bread, brewing beer, making wine, and in other food-making processes.

Meanwhile, a particular liking for bitter-tasting foods and drinks such as coffee and tonic water could mean you have psychopathic tendencies.
Psychologists have found that those with a preference for bitter tastes were more likely to exhibit signs of Machiavellianism, sadism, and narcissism.

That is, they were more prone to being duplicitous and self-serving, cold-hearted and lacking in empathy, vain and selfish, and more likely to derive pleasure from other people’s pain.
The findings of the study provide the ‘first empirical evidence that bitter taste preferences are linked to malevolent personality traits,’ said the researchers from Innsbruck University in Austria, who studied 1,000 people in two separate experiments.

“The results suggest that how much people like bitter-tasting foods and drinks is stably tied to how dark their personality is.”
Bitter foods include unsweetened cocoa, black coffee, radishes and the quinine in tonic water.
For the first experiment, 500 men and women were shown a long list of foods with equal numbers of sweet, salty, sour and bitter foods. These included chocolate cake, bacon, vinegar and radishes.
Having a wider face has been linked with higher levels of attraction and aggression, and recent research suggested it may also be a sign of psychopathy.

A study of students and prison inmates found that men with a higher facial width-to-height ratio were more likely to exhibit what’s known as ‘self-centred impulsivity’.
They also showed signs of ‘fearless dominance’ as well as a tendency to blame other people for problems.

Self-centred impulsivity is a category of traits including Machiavellian egocentricity and is the tendency to consider only personal needs, with a disregard for the interests of anyone else.
Those high in self-centred impulsivity also tend to neglect the social norms and regulations that the rest of us live by.

Fearless dominance, meanwhile, includes a tendency to embrace risk without any fear, showing limited reaction to awful events that would make the rest of us panic – combined with a tendency to appear charming and influential.

They were asked to rate how much they liked each of them on a six-point scale ranging from dislike strongly to like strongly. The participants, who had an average age of 35, then completed four separate personality questionnaires.


The first measured their levels of aggression by asking them to rate how much statements such as ‘Given enough provocation, I may hit someone’ sounded like them.

The foods, all rich in a compound called spermidine, could help stave off cancer, Alzheimer’s and Parkinson’s disease, among others.
Scientists at the Weizmann Institute in Israel discovered that spermidine reverses the body’s circadian rhythm, making it ‘younger’ and less prone to the age-related diseases.
They note that falling levels of polyamines, compounds that are present in all living cells, cause circadian rhythms to slow down.

This effect was reversed by a dietary supplementation containing spermidine, when given to mice.
Senior author, Dr. Gad Asher, said: “This discovery demonstrates the tight intertwining between circadian clocks and metabolism and opens new possibilities for nutritional interventions that modulate the clock’s function.
“Impaired circadian rhythmicity has been linked to a wide variety of age-related diseases, including cancer, Alzheimer’s disease, Parkinson’s disease, and inflammation.”
Polyamines are essential molecules present in all living organisms.
They are derived from dietary sources and are synthesized by the body’s cells, in turn regulating a variety of key cellular processes, such as cell growth and proliferation.
Asher and his team of researchers suspected that polyamines might also play a role in circadian biology, because they are known to influence the clock’s functions.
When young mice were treated with a drug that inhibits polyamine synthesis, their circadian clock slowed down by around 11 minutes per day, compared to those mice who received no treatment.
In contrast, adult mice that received extra spermidine in their drinking water had clocks that ran about eight minutes faster, than those of untreated mice.

The effects of polyamines on the circadian clock were less pronounced in mice than in cells due to the tight regulation of these critcial compounds in their natural physiological context.

However, even subtle clock deviations have been associated with a wide variety of metabolic and age-related diseases.

Your parents were right – carrots really can help your eyesight. Pigments called carotenoids – which give vegetables like carrots, peppers and spinach their colours – can slow the progression of age-related macular degeneration (AMD), researchers have found.

The condition is one of the most common causes of vision loss in older people – and is also on the rise.
A recent study published in Lancet Global Health estimated there will be 196 million sufferers by 2020 and 288 million by 2040.

The Harvard University-led study used data from a population survey that tracked more than 100,000 over-50s over a period of 25 years.

It found that those who consumed the highest levels of the carotenoids lutein and zeaxanthin had a 40 per cent lower risk of developing the advanced form of the condition than those who ate the least.
Lutein and zeaxanthin are found in high concentrations in the macula of the eye, where they are known as the macular pigment.

The macular pigment protects the macula by interacting with free radicals to prevent cell damage and by filtering out damaging blue light. Good sources of lutein and zeaxanthin are dark leafy vegetables and eggs.

The study also found those who consumed the highest levels of some of the other forms of carotenoids – alpha-carotene, beta-carotene and beta-cryptoxanthin – had a 25 per cent to 35 per cent lower risk of advanced AMD.

Carrots and sweet potato are sources of alpha and beta-carotene, while beta-cryptoxanthin is found in fruits like oranges and peaches.
The researchers did not find any link between carotenoids and the intermediate form of AMD, however.

“This study suggests that carotenoids may slow worsening of AMD once it occurs,” the researchers concluded in the journal JAMA Opthalmology. AMD, although painless, causes the loss of central vision, usually in both eyes.
